I wrote post on rolling back WordPress awhile ago. Also, you can install a plugin that disables automatic WordPress updates.

I have used a few of these. Some just seem to “break” if you have a larger site to backup… some are very easy to use. Today I use Updraft plus on a regular basis, I like it because I can easily download an extra copy to my computer. Also easy to schedule backups to dropbox for example…

The most important message though is to BACKUP your sites. You never know when you will need it. Find a plugin that works for you!
